So my Valentine's day gift broke tradition this year. Ever since we have been together Boomer and I have done the same thing for valentine's day every year. We get takeout from Noodles & Co. (Wisco. Mac & Cheese, with chicken), and I usually make a few apps, and dessert. We end up with a 3 course meal that is delicious, budget-friendly, and romantic.
This year Boomer decided it was time I had a meal made for me. Boomer never cooks (unless it comes from a box, bag, can, or involves eggs), so this was a treat. I ended up stepping in to help with prep because I was scared Boomer was going to have a nervous breakdown, but I did all the easy stuff. The menu included Bacon Wrapped Scallops with Avocado and a Spicy Mayo, Hasselback Potatoes, Shrimp Scampi, Roasted Asparagus and...
Stuffed Cherry Tomatoes
Parmesan Stuffed Cremini Mushrooms
It also involved a good bottle of Sauvignon Blanc, and lots of ice water.
Dessert was chocolate dipped strawberries, but we put them in the freezer to harden quickly, forgot about them, and now the strawberries are mushy inside the chocolate shell. So, we put them back in the freezer with the excuse that we'll use them in smoothies. Chocolate dipped Strawberry Smoothies anyone?
All of the recipes that Boomer so diligently researched, shopped for, and made were great. The tomatoes, and mushrooms were my favorite! And I cannot wait to make them again and share the recipes with you!
I hope everyone had a great Valentine's Day... I know I did! :-)
