This is actually my second time writing this post.... Let's hope it turns out ok...
I spent a lot of the weekend job hunting. I thought I was going to get a job I interviewed for but I'm losing faith. I've spoken to the woman that interviewed me ever week since the interview, but I'm starting to get the feeling that maybe they don't know how to let me down.... So i've been eating my way through my feelings, stressing out, and job-hunting.
In my Five Things Friday post I mentioned I had a weird week. The job thing was part of it, but I was also in a bit of excitement, and despair regarding this blog, and this life of mine. But I came across a new blog, and it totally inspired, and rejuvenated what I want to do with this blog, and my life if we wanna get real deep! Enter, Run, Eat, Repeat. Monica is hilarious, and real, and I can learn a lot from her, as well as with her. If that makes sense.
On to the eats! I ate a lot, and yet have very few photos to show for it. I guess I forget to grab my camera every time I reached for a handful of Quaker Oatmeal squares, Crazy Core Skittles, clementines, granola, and yogurt. Oops, My bad. But, here is what I did document.
Friday night Freeziac run! I love self serve fro-yo, and I love this place, it has such a variety of fro-yo, and toppings, and it's yummy. I don't love that it's in the Mall of America, but oh well. I can still be in and out in 10 minutes. In the mix: tart strawberry, and lemon, sweet peanut butter, mocha cappuccino swirl, and dulce de leche. On top: fresh strawberries, blackberries, mangos, kiwis, and raspberry sauce, and cookie dough bits, and chocolate chips. Double Yum!
Saturday morning breakfast was 2 over easy eggs with swiss, on a sandwich thin, a smoothie with greek yogurt, berries, 1/2 frozen banana, grapefruit juice, almond butter, ice, and a lil granola on top (i'm out of spinach, and wished I had had some for my smoothie, I don't think I can drink a smoothie without the green stuff ever again). With a side of Black Heels to Tractor Wheels. But then I felt guilty and got back to job hunting.
I used my frozen perfect pizza crust, jarred marinara, sausage, caramelized onions, sauteed mushrooms, swiss cheese, and blueberry vanilla goat cheese. It may sound weird but it was good! Swiss is such a mild cheese so I went ahead and added the goat cheese. The sweetness from the blueberries really complemented the salty sausage, and sweet onions, and you still got the unmistakable tang from the goat cheese! Freakin' delicious!
Boomer also got a Neti-Pot type thing from a co-worker and used it last night. I took some pictures because I thought it was heeelarious at the time, especially Boomer's freak-out, but now the pictures just look gross. So, I'll spare you.
